They make a complete and nutritious meal when served by themselves, plain and simple. Or, they can be enjoyed as part of a New Mexican combination meal, complimenting many different entrees, including enchiladas, rellenos, tacos and grilled meats.  As an appetizer, they can be steamed, unwrapped and cut into 1 to 2 inch slices.

Tamales are easy to heat and serve

Our tamales are shipped frozen and fully cooked.  Refrigerate or freeze upon receipt.  Tamales will keep for two week when refrigerated and in a sealed bag.  They will keep at least six months or more when frozen in a sealed bag.

Frozen tamales can be thawed at room temperature in 4-6 hours, or they can be thawed in a refrigerator in about a day.

Keep the husks on when heating!  For best results, steam tamales in the top half of a steamer over boiling water.  Cover the pot and steam for 10 minutes if thawed, 20 to 25 minutes if frozen.

They can also be microwaved, but never bake them.

Microwave method 1:  Place the tamales in a sealed plastic bag (with husks on) along with 1/2 oz. of water.  Heat on high for 2 minutes if thawed, 3 1/2 minutes if frozen.

Shipping

Your order will be shipped via Priority Mail or Federal Express Ground to arrive in a timely manner.  When your order is shipped we will email or call you with a tracking number.  We can ship most orders to P.O. Boxes but, if so, please arrange to pick up your order at the post office as soon as it arrives.

Most orders are shipped within 2-3 weeks of receipt and we suggest you allow sufficent time when ordering.  In some cases, orders may be delayed due to weather, crop conditions or other situations which may affect product availability. We normally ship on Mondays and Tuesdays. If you request a rush order or specific delivery date, please notify us and we will try to accommodate you.  Your order may be shipped in several different packages depending on the shipping requirements of the products you order.

For perishable items, please notify us if there are any specific dates when you cannot receive your order and we will adjust the shipping date accordingly.  Or, you can arrange for a trusted neighbor to receive your order and store it properly until such time as you can transfer it to your refrigerator or freezer.  Please note that FedEx Ground and Priority Mail shipments may arrive on Saturday.

Roasted green chile and other food items are shipped in special insulated containers and should arrive chilled or frozen in 1-3 days, depending on the final destination .  Upon receipt, your order should be opened immediately and placed in a freezer or refrigerator until used.
