Red chile is actually mature green chile and has a sweeter and more complex flavor than green chile. If you are lucky enough to find fresh red chile you'll become addicted to it.
Use it in all your favorite chile recipes: salsa, tamales, posole - even chile rellenos. Serve it with grilled chicken or beef, even fish. Mix it with green chile for a colorful salsa alternative. And roasted red chile makes absolutely the best sauce for enchiladas. (See our Red Chile Sauce recipe below.)
Unfortunately, fresh red chile is very perishable and impossible to find in grocery stores. But now, for the first time, we’re please to offer roasted and frozen Red Chile. Our red chile is picked at the peak of maturity and then flame roasted and frozen.

About our Chile
The best chile peppers come from an area in Southern New Mexico which includes the Mesilla Valley and the Hatch area.
We have been shipping Fresh Green Chile for several years now, consistently giving our repeat customers a reason to buy from us again and again. Our chile is home grown on small family farms, not on large commercial farms.

We ship weekly, as soon as the chile is roasted and frozen.
For the states of AZ. CA (900-937), CO, NM, NV (890-891). OK and TX we ship FedEx or UPS ground,. which arrives in 2 days. Our normal shipping and handling charges apply (which are calculated when you check out).
For all other areas we ship via Priority Mail or 2-3 Day FedEx or UPS. For these areas we require an Express Surcharge, in addition to our normal shipping and charges (which are calculated when you check out).

Fresh Red Chile Sauce
14 to 24 fresh red chiles or I cup of frozen chiles
1 teaspoon salt
1 teaspoon oregano
1/2 cup water
1 clove garlic
1 small onion, sliced
1 tablespoon butter or margarine

Remove stems, seeds, and veins of fresh red chile. Cover with boiling water and let stand 10 minutes. Remove chile and place with salt, garlic, onion, and oregano in blender. Add water, according to blender requirements, and blend until all ingredients are reduced to a smooth paste.
Put sauce in heavy pan. Add 1/2 cup water (or more, depending upon the amount used in blending). Add butter or margarine. Simmer about 1/2 hour or until mixture has the desired consistency. Stir occasionally to keep from burning. Yield: 1 to 1 1/2 cups.
